Demi-Muids from Oud Beersel is a single-vessel gueuze aged in half-barrel demi-muid casks, each lending a softer, rounder character than larger foeders. Spontaneous fermentation brings the classic sour backbone, while the smaller oak contact imparts gentle earthiness and barnyard notes. Lemon zest and stone fruit balance the dry, funky finish with welcome brightness.
